After just more than a decade as a chef running restaurants worldwide, a change in life goals put William on the path of construction where he found himself, under the guidance of Hans, building what would be the final restaurant he worked in. "I found the process of construction no different to the mentality I had for creating fine food." With planning, consideration to ingredients (now materials) and mastery of techniques at the forefront of every aspect of both professions, William found himself falling in love with a new trade.
